Ingredients:

15 oz smoked vegan sausage, thinly sliced
1/2 cup chopped onion
1/2 cup chopped green or red bell pepper
6 large eggs
1 1/2 cups milk
1 tsp Creole or Cajun seasoning blend
1/4 tsp black pepper
1 tbsp fresh chopped parsley (optional)
4 slices of bread torn into 1-inch pieces
2 medium tomatoes, diced
2 cups shredded Cheddar cheese
Salt & pepper to taste

Directions:

1. Warm the oven to 350°F, and grease a shallow 2-quart baking dish.
2. In a skillet, cook the sliced sausage with the onion and bell pepper until vegetables are translucent.
3. Whisk the eggs, milk, Creole seasoning, and pepper in a bowl. Set aside
4. Arrange the torn bread over the bottom of the buttered baking dish. Sprinkle with diced tomatoes and the sausage mixture
5. Top with Cheddar cheese put the mixture evenly over the top. Sprinkle using salt and pepper. Bake the
casserole until it is puffy and lightly browned.
