Chicken Sandwich2

The key to this chicken sandwich is the combination of spices that give it a great flavor like a powerful barbecue, creating an exterior that caramelizes until almost toasted on the griddle, to leave it crispy.

  • Ingredients for 2 people . 4 boneless skinless chicken thighs, 2 minced garlic cloves, 1/2 teaspoon cinnamon, 1/2 teaspoon cumin, 1/2 teaspoon ginger, 1/2 teaspoon coriander, 1/2 teaspoon hot paprika, 1/4 teaspoon cardamom, 1/4 teaspoon nutmeg, 1/4 teaspoon allspice (optional), 5 ml lemon juice, 30 ml extra virgin olive oil, 1 baguette or ciabatta, juice of 1 lime or lemon, fresh parsley or coriander, Tabasco to taste, 1 small avocado, 20 g of cream cheese, 5 ml of mustard, 2 tomatoes, lamb’s lettuce, pepper and salt.
  • Elaboration. Mix the garlic with all the spices, the lemon juice and the olive oil, until it forms a paste. Pat the chicken dry with kitchen paper and season with salt and pepper. Place in a deep plate and cover with the marinade, mixing well. Cover and let stand for at least 30 minutes. Heat a little oil and cook the chicken over a high heat, letting it brown well on both sides. It should be dark on the outside but tender on the inside. Remove to a cutting board or plate. Cut the loaf of bread into two halves and open with a good serrated knife. Toast in the same pan in which we have cooked the chicken. Mix the avocado with the juice of a lime, a little salt and black pepper, chopped coriander or parsley and Tabasco to taste. Cover the lower half of the sandwiches with this mixture. Mix the cream cheese with the mustard, give a touch of pepper and cover the other half. Cut the tomatoes into not very thick slices and spread over the avocado. Cut the chicken into small pieces and carefully distribute on top. Add canons to taste and close.

Do you associate sandwiches with summer? They remind me a lot of my childhood, when I spent my holidays in the countryside, playing all day with my cousins. Now I like to recover the memory of those snacks when we organize an excursion to take advantage of the good weather, although I have a hard time getting my boyfriend out of his traditional loin with cheese. Of course, this spiced chicken sandwich with avocado, cream cheese and lamb’s lettuce devoured it without hesitation.

Marinating the chicken with a good mix of spices is very worthwhile, and also grilling it so that it crisps up a bit on the outside. It doesn’t really burn, but the spices in the mix help give it that striking dark hue that contrasts with the avocado and cheese creams that ensure a juicy filling. I have used thighs because they are tastier, although it could be made with breast, or with tofu in a vegetarian version.

Peel the garlic cloves and chop. Mix with all the spices, the lemon juice and the olive oil, to form a not too thick paste . Trim any excess fat from the chicken, dry with kitchen paper and season with salt and pepper. Place in a deep plate and cover with the marinade, mixing well. Cover and let stand for at least 30 minutes, better two hours.
