Valencian bracada


On this occasion we have a very popular sandwich in Valencia , with few ingredients but that do not need more to provide great pleasure to carnivores between two pieces of bread. Sometimes cheese is also added to add juiciness and more texture, but if the ingredients are of quality, it is not necessary.

  • Ingredients for 1 person . 1 or 2 beef fillets, 1/2 onion, 1/2 clove of garlic, 2 slices of Serrano ham, bread, oil and salt.
  • Elaboration . We start by cutting the onion into julienne strips and browning it over medium heat in a pan with a drizzle of oil and a pinch of salt. Let it soften for at least 10 minutes. On the other hand, we make the veal fillets with a little minced garlic and we also pass the slices of serrano ham through the pan. Finally, we assemble the sandwich with the veal, the onion on top and crowning it with the slices of Serrano ham.

Marinated tomato sandwich with anchovies and ricotta cheese

Tomato sandwich

Inspired by summer flavors and with the most Mediterranean Italian cuisine in mind, this sandwich pays tribute to semi-preserves to take advantage of all the flavor provided by products such as capers and anchovies. Sweet and fresh ricotta cheese balances the filling mixture and refreshes the palate; could be replaced by burrata, cottage cheese or mozzarella.

  • Ingredients for 2 people . 150 g of cherry tomatoes (kumato or another variety), 8 anchovies, 1 tablespoon of capers, 50 ml of extra virgin olive oil, 30 ml of Modena vinegar, 120 g of ricotta cheese, 1 lemon, 2 rolls of rye or 1 large loaf, paprika and ground black pepper.
  • Elaboration . Wash and dry the tomatoes, cut into slices or in half and place in a bowl. Slightly drain the anchovies, chop and add with the capers to the tomatoes. Add a little lemon juice and zest, oil and vinegar, a pinch of pepper and mix. Let stand covered in the fridge. Open the loaves and lightly toast on the griddle or in the toaster. Drain the ricotta and place a thin layer on the two bread bases. Divide the tomato and anchovy filling and top with a generous portion of ricotta. Add a little of the marinade liquid, black pepper, paprika and lemon zest.

serrano of the south


The name of this sandwich, which is very popular in many areas of Andalusia, leaves no room for doubt. Serrano ham is combined with good pork loin cooked at the moment, and everything is completed with fried peppers, tomato and a classic garnish of French fries.

  • Ingredients for 1 person . 2 raw pork loin fillets, 2-3 fine green peppers, 2 slices of Serrano ham, 1 Vienna sandwich roll, 1 potato for frying, 1/2 tomato, extra virgin olive oil and salt.
  • Elaboration . We start by peeling, cutting and frying the potatoes for the garnish, salt and reserve. We also fry the peppers until they are very tender and the skin burnt, which we can peel. We remove their heads, open them and remove the seeds. Put the slices of pork loin on the grill and cook until golden brown. Meanwhile we peel the tomato and cut a couple of slices. Place the tomato on the base of the bread, cover with the slices of loin, the open green pepper and finish with the Serrano ham.

Chimichurri Chicken Bites


The boring chicken breast is transformed in this recipe into a very tasty sandwich, for which it is only necessary to improvise a very simple chimichurri but which manages to elevate the filling, giving it juiciness and powerful flavors.

  • Ingredients for 2 people : 2 rolls, 1 chicken breast, 1 bunch of fresh parsley, 1/2 red pepper, 30 g of red onion, 1 clove of garlic, 75 ml of extra virgin olive oil, 30 ml of vinegar white wine, black pepper and salt.
  • Elaboration. Cook the chicken breast in a pot with water and salt for about 25 minutes. Remove from the water and shred it. Cut the purple onion into julienne strips and fry for a couple of minutes in a pan with a tablespoon of oil. Add the chicken, season with salt, pepper and leave on low heat for about 10 minutes. For the chimichurri, wash the parsley well, chop the red pepper as well as the garlic clove. We place these ingredients in a food processor, add four tablespoons of oil, wine vinegar, salt and pepper. We process until we integrate everything into a thick consistency. Pour into a bowl, cover and refrigerate for about 10 minutes. To serve, we spread butter on each side of the loaves, we heat them in the oven at 200ºC for about five minutes. We fill them with green leaves, the chicken and the sauce.

Banh Mi, Vietnamese snack


We travel back to Asia to recreate a very popular sandwich in Vietnam since the French colonial era, characterized by the presence of crunchy vegetables and a dressing that includes rice vinegar. It can be completed with different meats, but the already roasted pork loin is one of the most delicious, which we can buy already prepared or roast at home .

  • Ingredients for 4 people . 4 medium baguettes, 4 carrots, 12 small pickles, 12 slices of roast pork loin, 16 fresh coriander leaves, 4 tablespoons of mayonnaise, 4 tablespoons of soy sauce, 4 tablespoons of rice vinegar, 30 g of butter, 4 teaspoons of sugar, salt and black pepper.
  • Elaboration . Peel and cut the carrots and cucumber (if using) into very fine sticks. Cut the pickles in half. In a bowl, put the sugar, the rice vinegar, mix and add the vegetables, leaving them to pair for about 15 minutes. Cut the roast pork loin into thin slices. Heat the butter in a frying pan, add the soy sauce and lightly caramelize the pork on both sides. Let cool in the pan. Cut the baguettes lengthwise and spread the crumb with mayonnaise, fill with the pork loin, as well as the marinated and drained carrots and pickles. Sprinkle with coriander leaves.
